Easter Biscuits Recipe

Light, buttery biscuits with a hint of spice, perfect for decorating!

Ingredients

  • 100g (½ cup) unsalted butter, softened
  • 75g (⅓ cup) caster sugar (superfine sugar)
  • 1 egg yolk
  • 200g (1⅔ cups) plain flour (all-purpose flour)
  • ½ tsp mixed spice (pumpkin spice)
  • 1 tbsp milk (if needed)
  • 50g (¼ cup) currants or raisins (optional)
  • 1 tsp vanilla extract (optional)

For Decoration

  • Icing sugar (powdered sugar), for glazing
  • Sprinkles or small sugar decorations

Method

  1. Preheat the oven to 180°C (160°C fan) / 350°F. Line a baking tray with parchment paper.
  2. In a bowl, cream the butter and sugar together until light and fluffy.
  3. Beat in the egg yolk and vanilla extract (if using).
  4. Sift in the flour and mixed spice, then mix to form a dough. If it’s too dry, add a little milk.
  5. Stir in currants or raisins if using.
  6. Roll out the dough on a floured surface to about 5mm (¼ inch) thick.
  7. Cut out shapes using Easter-themed cookie cutters and place them on the baking tray.
  8. Bake for 12-15 minutes until lightly golden. Let them cool on a wire rack.
  9. Decorate with icing and sprinkles once cooled.

Easter Cupcakes Recipe

Soft vanilla cupcakes topped with festive decorations!

Ingredients (Makes 12 cupcakes)

  • 125g (½ cup) unsalted butter, softened
  • 125g (⅔ cup) caster sugar (superfine sugar)
  • 2 eggs
  • 1 tsp vanilla extract
  • 125g (1 cup) self-raising flour (or 1 cup all-purpose flour + 1 tsp baking powder)
  • 2 tbsp milk

For the Icing

  • 200g (1¾ cups) icing sugar (powdered sugar)
  • 100g (½ cup) unsalted butter, softened
  • 1 tsp vanilla extract
  • 1-2 tbsp milk
  • Food colouring (optional)
  • Mini chocolate eggs for decoration

Method

  1. Preheat the oven to 180°C (160°C fan) / 350°F. Line a cupcake tray with paper cases.
  2. Cream the butter and sugar together until light and fluffy.
  3. Beat in the eggs one at a time, then add vanilla extract.
  4. Fold in the flour gently, adding milk to loosen the batter.
  5. Spoon the mixture into cupcake cases, filling each about two-thirds full.
  6. Bake for 15-18 minutes until golden and springy. Cool on a wire rack.
  7. To make the icing, beat the butter until smooth, then gradually mix in the icing sugar. Add vanilla and enough milk to get a smooth consistency.
  8. Pipe or spread the icing on the cooled cupcakes and decorate with mini eggs.
